HEAD COOK
 
The Head Cook is responsible for the overall preparation and quality of food served in the canteen. This role leads the kitchen team, plans and organizes daily production, ensures safe and hygienic food handling, and helps create a welcoming dining experience for everyone we serve. You will work closely with the Canteen Supervisor / Shift-in-Charge to make sure meals are on time, consistent, and within budget, while maintaining a clean and orderly kitchen.
 
Key Responsibilities:
Menu Execution & Food Preparation
Prepare and cook daily meals according to agreed menus, recipes, and portion sizes
Ensure food is tasty, well-presented, and ready on schedule for service
Adjust quantities based on expected guest numbers to reduce waste
Kitchen Leadership & Coordination
Lead and guide assistant cooks, kitchen helpers, and volunteers in their tasks.
Assign prep work (cutting, washing, marinating, basic cooking) and check results
Coordinate closely with front-of-house staff for smooth serving during peak times
Food Safety, Hygiene & Cleanliness
Enforce food safety standards: proper storage, temperature control, and prevention of cross-contamination.
Maintain a clean and organized kitchen, ensuring cleaning schedules and checklists are followed.
Monitor stock rotation (FIFO), check expiry dates, and identify items nearing expiry.
Stock & Cost Awareness
Help monitor daily and weekly usage of key ingredients.
Inform the supervisor/purchasing volunteer about low stocks, substitutions, and preferred suppliers.
Support efforts to control food cost through good portioning and reduced wastage.
Basic Qualifications:
Graduate of Culinary Arts, hospitality management, vocational Cookery, or related courses is an advantage
At least 2 years of experience as a cook in a canteen, cafeteria, restaurant, or similar food service setting; with NC2 certification
Solid practical skills in Filipino home-style and canteen-style cooking; some experience with simple international dishes is a plus.
Knowledge of basic food safety and sanitation (or willingness to undergo training)
Able to lead a small kitchen team, work under time pressure, and stay calm during busy periods
Honest, dependable, and willing to work shifts, weekends, and special events as needed
