Job Description
Will be in charge of a Team of professionals handling all meat and seafood processing, charcuterie, fish-mongerie... for a large-scale international brand name hotel with banqueting and fast-paced outlet operations.
Prepares yield tests of all items used in the butcher shop.
Assists with the operations, daily market lists & inter-kitchen transfers as required
Work Experience
Has a high knowledge and experience in actual global standard (European, Asian, Filipino) charcuterie, meat, and seafood processing.
Strong leadership skills, passionate, motivated, and a team player
Strong culinary background from top-level international free-standing or hotel à la carte restaurants.
Strong in the A-Z of Commissary, Butchery, and Stock Management Operations.
