Job Description
The VAM Production Specialist uses their expertise in food manufacturing, food safety and quality control to establish or improve existing production processes and activities for all value-added meat products. He monitors VAM production in different toll manufacturing facilities, supervises strict implementation of standard production processes and quality controls, and ensures accuracy and completeness of production reports and other documents.
Commissary Operations:
The VAM Production Specialist ensures that:
1. Approved specifications of raw materials, in-process and finished products are checked regularly, documented and communicated to R&D, QA, Procurement, and Toll Production departments.
2. VAM production is lead according to established standard process, food safety and quality specifications, and toll manufacturing teams are guided from receiving of raw materials to dispatch of finished goods
3. In-line decisions to improve production efficiencies or address immediate problems are implemented and immediate supervisor or concerned departments are notified immediately.
4. New products and processes developed are tested if applicable and consistently repeated in large scale production runs.
5. In-line documents (ISO, 5S/GMP, HACCP and Halal) and production reports are accurately completed, auditable and properly organized.
Other Tasks
1. The VAM Production Specialist assumes an active role in Tarlac Meat Master and The Good Meat both as mentor and technical resource.
2. The VAM Production Specialist takes a prominent role in the implementation and maintenance of systems such as 5S/GMP, HACCP, and ISO in all commissary operations.
3. The VAM Production Specialist actively participates in all company programs on quality improvement, safety & security, sustainability, corporate social responsibility and risk management.
4. The VAM Production Specialist may be assigned in other related tasks as directed by the R&D and Commissary Manager.
5. Ensures compliance to food safety, good housekeeping and quality management system based on the standards of 5S, GMP, HACCP, Halal and ISO.
6. Performs other tasks as may be assigned by the immediate superior.
Qualifications
Education:
Graduate of Bachelor of Science in Food Technology, Nutrition, Chemistry or any related course.
Experience:
At least 3 years experience in related work, with strong technical knowledge in food manufacturing/meat processing and quality assurance/control
Licenses:
with GMP/Food Safety trainings and FSCO certification
