MAIN JOB PURPOSE
To have a full working knowledge and capability to supervise, correct and demonstrate all duties and tasks in the assigned place of work.
To have a full knowledge on the usage of chemicals.
To be entirely flexible and adapt to rotate within the different sub departments of the Culinary Division or any other Department of the hotel as assigned.
To perform opening and closing procedures established for the place of work as assigned.
To ensure that the place of work and surrounding area is kept clean and organized at all times.
To supervise general cleaning duties as assigned by the Stewarding Manager or according to the standards established in the Department Operations Manual.
To supervise the cleaning and washing of dishes according to the established performance standards.
To supervise cleaning and washing of pots, pans and other kitchen utensils according to performance standards.
To handle operating equipment and kitchen equipment with care in order to reduce minimum breakages.
To assist in carrying out monthly, quarterly, bi-yearly, yearly inventory of operating equipment.
To supervise that garbage runs are strictly adhered to and areas are cleaned according to the established standards.
To have a thorough understanding and knowledge of all cleaning procedures, cleaning equipments operation, use of dishwashing machines and the type of chemicals to be used.
To ensure that operating supplies and chemicals are used properly and carefully in order to reduce spoilage and wastage.
To assist in the implementation of the various food safety and hygiene standards including HACCP / ISO22000 and other Local health regulations.
Ensure that all his team members follow the HACCP / ISO22000 regulations in collaboration with the Hygiene Manager.
To undertake any reasonable tasks and secondary duties as assigned by the Stewarding Manager.
To carry out any other reasonable duties and responsibilities as assigned.
CANDIDATE PROFILE
Education and Experience
Minimum 2 years relevant working experience with a supervisory responsibility in an AAA / Five star hotel operation.
Good problem solving and interpersonal skills.
Basic Food safety training or knowledge
Basic Knowledge on fire safety and health & safety protocols
Able to work nights, evening, days and weekends / holidays.
DUTIES AND RESPONSABILITIES
To report for duty punctually wearing the correct uniform and name tag.
To maintain a high standard of personal appearance and hygiene and adhere to the hotel and department appearance standards
To provide friendly, courteous and professional service at all times.
To maintain good working relationships with your colleagues and all other departments.
To ensure you read the hotel's Employee Handbook and have an understanding of and adhere to the hotel's rules and regulations and in particular, the policies and procedures relating to Fire, Hygiene, Health and Safety.
To comply with local legislation as required as well as the Hygiene Rules.
To respond to any changes in the department as instructed by the needs of the hotel.
To be flexible and extend job duties to carry out any other reasonable duties and responsibilities within the job capability as assigned, including redeployment to alternative departments/areas if required, to meet business demands and guest service needs.
To attend training and meetings as and when required.
To provide a courteous, professional, efficient and flexible service at all times, following Hotel Standards of Performance.
To be fully conversant with all services and facilities offered by the hotel.
To attend and contribute to all staff meetings Departmental and Hotel trainings scheduled and other related activities.
To handle guest and employee inquiries in a courteous and efficient manner and report guest complaints or problems to superiors if no immediate solution can be found.
