Job Description
The Technical R&D Specialist performs work in the areas of Research and Development, for all fresh and marinated meat products, all designed to monitor and ensure that customer product requirements are met with least cost formulation/s and continual improvement is sustained in R&D operations.
Key Duties & Responsibilities
Research and Development Operations
The Research and Development Specialist ensures that:
1. R&D systems are in place at all times.
2. Create novel products and ensure carcass balance through recipe creation.
3. Lower product cost and improve margins by optimizing formulations and processes of all fresh & marinated meat products.
4. Increase functionality and product applications of existing fresh & marinated meat products.
5. Establish fresh & marinated meat standard product and process specifications for consistency and replicability.
6. Develop, review and approve packaging materials and appropriate product label and usage information for all value-added meat products.
7. Technically support internal customers through value-added meat technical knowledge training
8. Test and evaluate new meat materials, additives and functional ingredients in a timely manner, with accurate and verifiable results, and relay these to the appropriate units for proper action.
9. Conducts shelf-life studies and external taste tests of all fresh & marinated meat products in a timely manner, with accurate and verifiable results.
10. Benchmark competitor's products and create research & development plans to gain a competitive edge over the competitor.
11. Standard specifications of the raw materials, in-process and finished products are created, documented and reviewed regularly, with all changes communicated to QA, Procurement, and Production departments.
12. Ensures that ISO, 5S/GMP, HACCP and Halal documents and records are consistent, accurate and up-to-date.
13. Supports the design of standard communication, R&D training materials and food solutions to internal partners and external customers.
14. Prepares technical reports for all new products and with the necessary conclusions and recommendations.
Other Tasks
1. The Technical R&D Specialist assumes an active role in The Good Meat both as mentor and technical resource.
2. The Technical R&D Specialist takes a prominent role in the implementation and maintenance of systems such as 5S/GMP, HACCP, and ISO.
3. The Technical R&D Specialist actively participates in all company programs on quality improvement, safety & security, sustainability, corporate social responsibility and risk management.
4. The Technical R&D Specialist may be assigned in other related tasks as directed by the R&D and Commissary Manager.
5. Ensures compliance to food safety, good housekeeping and quality management system based on the standards of 5S, GMP, HACCP, Halal and ISO.
6. Performs other tasks as may be assigned by the immediate superior.
Qualifications
Education:
Graduate of Bachelor of Science in Food Technology, Nutrition, Chemistry or any related course.
Experience:
At least 1-3 years experience in related work, with strong technical knowledge in Pork Slaughter, Meat Fabrication and/or Meat Processing.
Licenses:
with GMP/Food Safety trainings and/or FSCO certification is a plus
Other Requirements:
Entry level
1. Working knowledge of chemistry, physics, mathematics and animal sciences.
2. Ability to articulate ideas and communicate them clearly, confidently and effectively both verbally and in writing.
3. Ability to understand abstract or general ideas and apply them to specific situations.
4. Computer literacy and proficiency in the use of electronic spreadsheet, word processing and presentation applications.
