Job Description
1. Quality control on Meat Operations
2. Conduct Daily GMP pre and post operation checks. Ensure that GMP requirements are implemented in all plant operations (Clean kill, dirty kill, meat cutting and fabrication)
3. Conduct daily verification in the production process in accordance with inspection plan (room temperature, product temperature, pH, chlorine solution).
4. Conduct on site tests of chlorine concentration and recommends adjustments if necessary.
5. Performs internal daily calibration of weighing scales (pre & post op)
6. Ensures cleaning and sanitation of dirty kill, clean kill, offals cleaning area and fabrication is properly implemented
7. Assist in aseptic sampling and microbial environmental monitoring activities (ATP Swab Test)
8. Measure product dimension, weight measurements, organoleptic evaluation.
9. Conduct quality checks in slaughtering, chilling, meat fabrication and freezing activities based on approved procedures and verification plans.
10. Reject materials and products that do not meet expectations/specification and resolve production quality issues in a timely manner.
11. Verify cleaning activities in accordance to the approved procedures and cleaning/sanitizing agents.
12. Lead all product quality verification and condemnation activities.
13. Verify corrective action implementation and monitoring.
14. Document inspection outcomes by completing detailed reports and performance records.
15. Conducts GMP of truck and truck personnel
15. Verify blast freezer, chillers and storage temperatures.
16. Make recommendations to the operations as required . Identify quality problems and recommend solutions.
17. Follow all plant safety procedures.
18. Conduct immediate correction and corrective action of all plant operations concerns and issues.
19. Participate in all system audits including certification, regulatory, customer, and internal audits. Participate in internal assessments and audits as required.
20. The Quality Control Analyst actively participates in all company programs on quality improvement, safety & security, sustainability, corporate social responsibility and risk management.
21. Performs other assigned related tasks as directed by the immediate superior.
Qualifications
Education:
Bachelor's Degree in Food Science/Food Technology/ Biological Science/ Animal Science/ Microbiology or similar field
Experience:
With at 6 months to one year experience in Food Manufacturing, Food Service Operations, Quality Assurance Control, or related discipline
Additional Information
