Master Butcher/Meat Cutter
Job Duties and Responsibilities:
Negotiate with representatives from supply companies to determine order details.
Receive, inspect, and store meat upon delivery, to ensure meat quality.
Record quantity of meat received and issued to cooks and/or keep records of meat sales.
Supervise other butchers or meat cutters.
Cure, smoke, tenderize and preserve meat.
Cutting, grinding, and preparing meats for sale.
Weighing, packaging, pricing, and displaying products.
Tracking inventory.
Performing quality inspections on meats and other products.
Negotiating and confirming orders with suppliers.
Adhering to food safety and sanitation controls.
Coordinating deliveries or order pickups.
Qualifications:
Education or food preparation or meat cutting experience in the cutting of all types of beef, pork, lamb, veal, and poultry etc.
understand the meat operation process from beginning to end
Can do additional training and teach other staff how to cut meat.
Knowledge of meat preparation techniques and cuts.
Strong communication, task management, and customer service skills.
