KITCHEN CREW
 
Job Description:
Count and record all WASTAGES in full and complete details.
Conduct STOCKS INVENTORY at the end of the shift.
Record and communicate to the team about stocks AVAILABILITY.
Fill out daily monitoring forms.
Use the station checklist as a guide to COMPLETE the tasks.
Ensures completeness and quality presentation of every meal being served.
Strictly adhere to FOOD SAFETY regulations.
Monitor inventory par level.
Observe proper thawing of chicken.
Observe and forecast number of chicken wings to fry.
Thaw chicken wings enough for the shift.
Store and handle ingredients in the proper place and condition.
Follows correct frying time and temperature.
Follows correct process of filtering the oil and monitor its condition daily if replacement is needed.
Check and clean the oil dripper in the exhaust hood daily.
Assures BOH team are organize, complete and ready.
Directs the whole kitchen station FLOW.
Communicate ORDERS between the FOH and BOH.
Monitor staff PERFORMANCE accurately and timely.
Relay special request to certain kitchen station.
Assure product safety and quality are being checked before dispatching.
Controls quality and quantity of each product.
Performs best plating for product presentation of every dispatched product.
Clean and sanitize dispatching area.
Check the readiness of all equipment, utensils, supplies and ingredients.
Wash, chop and sort ingredients like vegetables and meats.
Turn on needed equipment with the correct temperature.
Inform OIC of any needed conditions.
Organize and follow sequence religiously.
Assures accuracy and speed during food preparation.
Keep track of ingredients inventory and collaborate with other kitchen staff and Immediate Head for stocks re-ordering.
Clean and wipe out oiliness from the internal and external part of the hoody by using dry towel. Keep all utensils clean by washing, rinsing, drying and well sanitized.
Clean the floor by using push brush, soap and mop before the shift ends.
Wipe to clean the wall.
Remove dirt found at the corners by slanting the head of the broom slightly and sweep out the dirt in a brisk motion.
Ensure that mops used are clean before/after using it.
Clean the mops by washing before drying them.
Ensures that no foul odor in the kitchen area especially upon entry.
Check backdoor or exit door for security.
Turns ON the exhaust line upon entry; it's the priority thing in the station checklist.
Ensure security and safety for important lines such as exhaust, gas, and water.
Label each ingredient for safety and ease.
Store all food products and ingredients in compliance with health and safety regulations.
Maintains clean and safe working area and secure all materials, equipment, utensils, and dishes.
Commit to uphold highest standards of sanitation while cooking and preparing the food.
Qualifications:
At least First Year College Level,
With at least six (6) months experience as Kitchen Crew.
Time Management

Hardworking,
Integrity and Reliability.
