General Responsibility:
Monitor the costs of the hotel and compare them to the projected budget. Responsible for recording financial and business activities and prepare periodic statements. The cost controller usually meets regularly with other key members of the company, including accountants, financial managers and other controlling executives to present cost and budget analyses for the formulation of action plans.
Specific Duties & Responsibilities:
Cost Controller
1. Compute and control the cost of rooms, food and beverage
2. Compute the cost of employees' meals, complimentary food and beverage expense.
3. Control the cost of the merchandise as per market list; coordinates to concerned Departments any excessive purchases.
4. Conduct physical inventory monthly and quarterly and yearly of all non-consumable and consumable items as scheduled;
5. Assist and participate in fixing the menu price in the light of the cost of commodities;
6. Check and monitor the proper recording of items and costing of guest checks, officers' checks with reference to the Order Slip;
7. Ensure proper documentation of market list, receiving report, grocery list and checking of invoices, etc.;
8. Regularly review recipe cost of the menu given by F&B from time to time and to update the same if necessary;
9. Conducts price-cost benchmarks with other hotels on a quarterly basis.
10. Promptly submit Cost Controller's monthly report;
11. Investigate and check the activities of the various outlets & kitchen;
12. Observe the standards of food served in staff cafeteria and all outlets
13. Train and orient cost control staff;
14. Prepare inventory report, variance report, F&B Cost report, local purchase report, reconciliation of Food & Beverage statements, dishes sales report, F&B cover report, and other reports that may be required;
15. Supervise the preparation Food/Beverage consumption report.
16. Assist the Finance Manager for smooth functioning of Finance Department.
17. Ensure compliance with 5S and safety requirements within the workplace.
18. Performs other duties inherent in his/her position and other related and special tasks which may be assigned by Finance Manager
